ONO – WAHOO

OVERVIEW
Ono is a lean, mild-tasting fish. Their meat is firm with a large, circular flake. A close relative of king mackerel, wahoo’s meat is lighter in color and has less of the red muscle meat. Wahoo’s pale pink meat turns white when cooked. (Seafood Business, 2011)

MAHI MAHI – DOLPHIN FISH

OVERVIEW
Mahimahi has a sweet, mildly pronounced flavor. For a milder flavor, trim away darker portions of the meat. Mahimahi is lean and fairly firm with large, moist flakes. The raw flesh is pinkish to grayish-white, though dark along the lateral line. When cooked, the meat is off-white. Mahimahi has a thick skin that should be removed before cooking. Mahimahi is low in saturated fat and is a good source of vitamin B12, phosphorus, and potassium and a very good source of protein, niacin, vitamin B6, and selenium.
AHI – YELLOWFIN TUNA

OVERVIEW
Yellowfin tuna has a mild, meaty flavor. It’s more flavorful than albacore, but leaner than bluefin. The meat is bright red when raw and turns brown to grayish-tan when cooked. The meat is firm and moist, with large flakes.
Yellowfin tuna can be found fresh, frozen, or canned as light-meat tuna (often blended with skipjack tuna and a bit pinker than canned albacore). Yellowfin tuna is often served raw as sashimi and in sushi. (Seafood Business, 2011)

OPAKAPAKA – CRIMSON SNAPPER

OVERVIEW
The flesh of the Opakapaka, or Crimson Snapper, is a clear, light pink and has a very delicate flavor – although the skin color can range from light brown to brighter colors. Known as Hawaii’s premier snapper.

Description: This delicate white fish is caught year-round in Hawai’i, but Opakapaka’s peak season is winter.
